You know the drillthe recipe calls for two teaspoons of chipotle in adobo sauce, you open the can, use your two teaspoons, and then have to do something with most of a can of chipotle in adobo sauce. You can plan a week of chipotle-flavored meals, you can freeze it until you finally throw it out in two years, or you can cut to the chase and just dump it down the disposal now. I just discovered ground dried chipotle in a jar, tried it in a recipe, and it tastes just like I used canned chipotles. I dont know why it took me so long to learn about this.

(32,216 posts)Into a bit of mayonnaise and it makes chipotle mayo. My guys use it on sandwiches and burgers. Im probably the only person who uses it up and runs out of it.

(15,805 posts)Just pour it into a 1qt freezer bag and smoosh it flat then you can easily break off little pieces as needed for your recipes and the rest stays frozen until next time.
I do the same thing with tomato paste.

My new fave spice is smoked hot paprika.

(33,643 posts)I make a pretty awesome (if I say so myself) salad dressing with the adobo sauce in it.
It's a riff on the salad dressing at Chipotle ... come to think of it, that's the one thing I actually like at Chipotle ...

(111,482 posts)I treat them like I treat Szechuan pickled veg, transfer to a clean glass jar and keep them cold. They do last for quite a while.
I love chipotle in adobo mixed with sour cream or cream cheese, the roaring hot chipotles and the cool dairy play nicely with each other when served with relatively unseasoned fare.
