(24,250 posts)3 or 4 years ago, we had some extra pie filling that was not enough for a pie, so we baked it by itself. It was delicious without the crust, so since then, we have done just the filling and call it pumpkin pudding.
In a 1987 Cooks magazine, which I still have (in 2 pieces now) there was a suggestion on how to give your pumpkin pie filling a little twist - rum. It does give a subtle difference to the flavor that we quite enjoy.
Last year, at Costco, we discovered something called Pie In A Jar by Claras Kitchen. Just add eggs! (And the rum.). It tastes really good, and seeing as we are feeling lazy this year, being that is just my husband and me, we opted for pumpkin pudding using Pie In A jar. Baked it up yesterday, and my husband is already eating it.
