In Oklahoma, okra is a summer way of life, but fried is the ONLY way to eat it. Cut it up in a bowl, add an egg and mix it up, salt and pepper, and then add corn meal (or Jiffy Cornbread mix--it's really good, too) to coat it and then fry it in vegetable oil. Drain it on a paper towel--nothing better!

Okra with fresh corn on the cob, home-grown tomatoes, and green beans and new potatoes and/or blackeyed peas and cornbread--the ultimate summer meal!!
