16. Slow cooked as a pot-roast with spuds, Neocons aren't so dry and stringy

First you sear the Neocon in oil over a high heat. Use a cast-iron Dutch oven, surround with potatoes and onions, cover closely, and cook in the oven on moderate heat for several hours. Don't give up -- it takes a lot of cooking, but the results can be delicious.
