Just cook it on low.

Throw lots of garlic, sauteed onions (you need to get them golden in a pan before you throw in the crock pot), chunks of zucchini and eggplant, a few cut up peppers (Red and green), a can of tomatoes (I only use half of the liquid from the can as I like this on the dryer side. You can also add red pepper flakes and of course salt and pepper.
