Homemade vegetable beef soup I am making :)
The beef is at the bottom.. really.. it is :)

I'm eating right now. But yours looks so much better than the stuff from the cafeteria.

8. Mine has...

Carrots
cabbage
green beans
white corn
diced tomatoes
celery
beef chunks (BIG ones)
onion slices
cubed potato
it would have turnips, if I had remembered to buy some :(
....

simmer beef scraps with the "foliage parts" of the celery stalks...add a quartered onion and 3 bay leaves... cover and simmer.. for a long time :)

Strain out all the above ingredients except the bay leaves..

Add all the ingredients to the broth and add the trimmed (fat free) beef cubes...

simmer until the meat falls apart..

EASY and CHEAP... I will be giving lots of this away to friends..:)
