I use a beef base (stock) about 2 quarts. First I cook either flank steak, short ribs or stew meat in it for a couple hours. Then add 2 cans of chopped tomatos 1 can tomato sauce about 3 chopped garlic cloves 1 medium onion 2 lbs of cabbage 6 tbs brown sugar and 1/4 cup of cider vinegar
and of course salt and pepper to taste
let it simmer till the cabbage is cooked
Yummy!

but borscht gets its flavor from the sweetness of the beets and the sour of the vinegar so yes...a little.
