Okay, the ending of the movie is confusing. When he's sitting in the diner and her mom is serving him coffee or whatever, did that mean Hillary Swank was his grand-daughter and her mom was the daughter who never wrote back? I didn't get that whole ending. Why was the mom in the diner with him? It was her mom in the diner wasn't it? Why would he even talk to her after her being such a crappy mom? Guilt for being a father that left her?

Because Swank's mom was trailer park trash who put DisneyWorld before her daughter and tried to swipe her from her earnings. That was the dinner they visited when Eastwood & Swank were first driving around doing fights in the region. Since that was near her home, they stopped by because he liked Lemon Pies and the pie served at that diner was made with real Lemons.
After assisting in her suicide, Eastwood naturally would have to leave his home to keep from being arrested. I think he just went to that diner in order to remember Hilary and a special moment they shared together at that restaurant
