Actually I fix Corn Beef two ways, I boil it about an hour, then put it in a roasting pan, coat the top of the Corn Beef with brown and roast.
I also boil corn beef, add cabbage, potatoes, onions and carrots.

6. I cure it myself, and then boil it. |
|
I've a bit of a purist I guess, because I can't imagine cooking it any other way.

Actually what I'd like on St. Patty's day is some smoked salmon, crackers and fruit with a nice glass of Harp.

8. I was raised on old fashioned boiled corned beef, cabbage, potatoes. |
|
But I like to bake it. Do the corned beef first (with large diced onions) for a couple hours then throw in the potatoes and carrots and when they're about done, but in the cabbage (cut into wedges with butter on them).
I can eat the stuff for days. And do.
