Besides all the usual spud toppings, I encourage experimentation. I've had baked potatoes topped with salsa, black beans, steamed asparagus, yogurt & mustard sauce (not all at the same time, however!).

31. Red baked potato
I had always used Idaho for baking red for potato salad etc. One day tried a red potato baked and it was great. A lot more moist! I top with my favorite butter, sour cream and chives, S&P. Yum. I love baked sweet potatoes as well with lots of butter S&&P.
