28. Man - have I ever been there! |
|
Out of financial necessity, many years ago. I finally managed to pull off a faux gourmet effect by taking the noodles, cooked, seasoned and drained, and mixing with two beaten eggs and chopped scallions. Pour half the godawful looking mess into a small frying pan. Dump in a can of crab meat. Pour remaing godawful looking mess on top. Cover and cook on low for 5 minutes. Then slide "Faux Egg Foo Yung" onto plate and flip back into pan to cook top side. Fake some kind of gravy with a basic roux and chicken boullion, liquid preferable - like Bovril - and dump on top. Or some kind of corn starch gravy, if you're good at it. For whatever reason, it actually works. And, yes, I invented this out of desperation.
I still fiddle with Ramen on occasion, but now I have access to many other types of Oriental noodles, thanks to Toronto's fabulous Chinatown.
My bit of nostalgia was tempered by remembering eating leftover take out rice with salad dressing. There are MANY things I don't miss aboutt college....

I just came up with a beautiful and simple meatball/gravy recipe.. It's so good I've made it about 3 times a week for the past three weeks. Two meals worth each time.
I'm constantly obsessed with homemade Chinese food and pizza.
I agree that Nacho Supremes are really tasty. I get the "beef-like substance" version though.
My previous obsession was Vietnamese Pho Soup (3 times a week), but I've slowed down and only get it about once every few weeks now.

1 meat patty (beef, pork or turkey - They all taste the same) 2 slices of white bread cubed and some crumbled club crackers 1 egg 1/4 cup onion and two cloves garlic, carmelized in olive oil About 1/4 tsp each pepper, salt, cayenne, chili powder, oragano, parsley and worcheshire sauce
Mix it all together with your hands, chill and form balls.. Fry in EV olive oil for about 8 minutes. Move meatballs to the side of the pan and add two pats of butter to pan and about 1 tbsp flour. Cook roux for a minute or two. Add about 1/2 can of chicken broth, about 1/4 cup milk. Whisk it quickly. Add some half-and-half, more pepper and parsley, and some worcheshire for color. Cook everything for another 5 minutes. Done.

I know it sounds like it would be really bland, but I love it, I can't seem to get enough of it. I try to consume a lot of protein since I tend to get iron-deficiency anemia.
Oh, and bison burgers. BISON BURGERS. Free-range, antibiotic/hormone free, with whole grain bread, tomatoes, romaine lettuce, and spicy mustard. Mmmmmmmmmmmm. :9 You must try them. I can't remember what beef tastes like, so I don't have much of a basis for comparison, but it's so good. It's also much leaner, lower in fat & cholesterol, and higher in iron & protein than pretty much any other meat.
<literally almost drools just considering the delicacy>
Dammit, why did you have to ask this? Now I'm fixated on the damn things, even though I had one just last night, and I'm nowhere near a place where I could possibly buy one right now.

19. BTW...I make an awesome and fairly easy chicken pot pie. |
|
That can me made in bulk and frozen.
Just dice some cooked chicken. Combine some frozen peas and carrots with some onions and potatoes. Get a can of condensed cream of chicken soup and dilute slightly until you have a decent consistency for pot pie. Mix all that stuff together and allow to cool.
Then take some pie crust mix and small foil pie pans, and make according to instructions.
After putting the bottom layer of crust in the pan, used the cooled mixture to fill the crust.
Cover the the pie with another layer of dough crust and cook or freeze in foil until you want an easy meal.
Takes an hour or so, but you can easily make 10 or more personal size pot pies in that time.

32. Low Carb Cream of Spinach Soup |
|
Saute some onions in butter. Blend about a half bag of spinach with low carb milk and chicken broth and some cream cheese until mised to consistency you will like.
Add to onions, season with nutmeg, cayenne or tabasco and salt. Heat thru and adjust liquids and seasonings to taste.
The nutmeg and cayenne are the secrets - good stuff and good for you.
