I need a good Bread recipe |

I love making bread and I am always looking for new Ideas. I make bread by hand and If anyone has any good recipes please post them.
(This bread is so easy to make)
Pita Bread
1 C Water (Warm) 1 oz Fresh Yeast (if using dry 1/2 oz) 1 1/2 oz Wheat Flour 10 oz Bread Flour (Reg. Flour) 1 tsp. Olive Oil 1 tsp. Salt
Mix everything together until you form your dough. Cut out 5 oz portions and roll out to 5 inch circles. Place on cookie sheet that's been lined with parchment paper (make sure you either spray the paper with cooking spray or sprinkle with corn meal) and back at 400 degrees until light brown. Do not let it become dark brown. Wrap it in a damp(not wet) kitchen towel when it come out of the oven.

If you make it right you get a pocket. My Mom only made cornbread because my family is from the south. I love other ethnic breads and good ethnic breads are my weakness.

4. Lemon beer wheat bread |

3 cups self-rising flour* 3 tablespoons sugar 12oz beer (warm) preferably a darker beer, i prefer Harpoon IPA 1/4 cup shaved lemon peel
1. Preheat oven to 375. Lightly grease or spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray. 2. Combine all ingredients, mixing well. 3. Pour into prepared loaf pan and bake for 1 hour.
Very yummy, the lemon really makes it super tasty!

This comes from a book I forget the name of but was written by Jane Brody, who wrote for the New York Times back in the 70's. It is called "Richard's Best Bread". It makes three loaves:
2 cups scalded milk - cooled two packets yeast half cup luke warm water 1 teaspoon sugar
6 cups of flour your choice of combinations (my favorite is 3 bread flour, 3 whole wheat) You can also make good rye bread with 3 bread flour and 3 rye flour 1 teaspoon salt two eggs 1/3 cup sweetner (my favorite is honey - you can use brown sugar, molassas or white sugar) 1/3 cup oil (I usually use canola unless I'm making it Italian then I use Olive oil) 1 cup old fashioned oatmeal 1/2 cup processed bran
seasonings as you like (sometimes I add 2 tsp dried rosemary - this is particularly good for turkey sandwiches) sometimes I use 1 tsp garlic (for the Italian) or 2 tsp carraway seeds for the rye.
Proof the yeast with the water and sugar - mix the wet ingredients and add the yeast mix to it when the milk has cooled then add the bran and oatmeal start mixing in the flour and knead the bread. You will let it rest till it has doubled in size and then you smack it down knead it again and put it into loaf pans. Bake at 325 for about 35-40 min.
You can also half this recipe and plop it into a bread machine where it makes a 1 1/2 pound loaf.
