oven tends to get more hot at the bottom so that it doesn't get overdone. I have to do that with the oven at this house. I forgot the other day and totally destroyed 2 dozen muffins. I was really mad. Butter burns more easily than other fats, just remember that.

25. Never Fail Pie Crust From Mary's Grandma |

4 Cups All Purpose Flour 1 tsp. Salt 1 Table Spoon Sugar Mix those three ingredients and cut in: 1 3/4 cups of Unsalted BUTTER
In a separate bowl, mix together: 1 egg 1 Tablespoon Vinegar 1/4 cup of ice cold water (you can add more COLD water as needed)
Use a fork to work this into the flour and butter mixture. Don't work it too much. Roll into a ball and refrigerate for 1/2 to one hour.
Roll out and use!!! :) It's Yummy! You can keep it in the fridge for up to 3 days, or you can freeze it. If you're going to freeze it, I suggest rolling it out first to make it easier on yourself later.

I hope it's good. Ever since Crisco changed their ingredients I don't like using it for pie or anything. Always looking for butter recipes...and with the vinegar, I think this is a good one.
Just in time for Pumpkin Pie for Thanksgiving...

butter for a very long time.....if you're worried, cook a small piece first to make sure that your flour to butter ratio is ok. Then, if it's got too much butter compared to flour, just add a little more flour. :) I'm a big proponent of testing out your recipe before going full tilt into the main pie, batch of cookies whatever. Even a change in humidity can affect the outcome.

When flour is twice the amount of shortening, or butter, it's usually very flaky. The 1-3/4 cup butter sounds good.
I bet these would do up nice for kolach - you know, rolling and cutting into squares, folding over with a teaspoon or so of apricot, lekvar (prune), or nut....
