This is day nine of vegetarianism for me and my daughter. And happily, my husband decided tonight to join us! He's been eating the vegetarian dinners I've been making each night and tonight, after baked sweet potatoes, a spring leafy green salad, and split pea soup (homemade!), he stood up and said "DAMN, that was filling!"
THAT'S what convinced him, LOL! He half-thought he'd starve on a vegetarian diet. He has LOVED what I've been making. He did say "but NO tofu!" and I said "What if you don't even know you're eating it?" and he conceded he wouldn't care. I'm planning on trying some tofu in stir fry this week.
I feel even more committed to this than I did when I started. Energy level is still high, I just keep feeling better and better and I feel good about NOT eating meat. And this might sound gross, but I love the fact that animal flesh is not in my intestines. Blech.
In fact, though we had been eating only free-range organic eggs, we are probably going to cut that out, too. I found out you really can't be sure about the conditions of the chicken even when they are "organic free-range" and that bothers me.
Oh and all three of us have decided soy milk rocks. :thumbsup:
This is so fantastic and I'm so happy we decided to go for it. I read in that article that your chance of cancer, heart disease, and for women, breast cancer is considerably lower when you are vegetarian or vegan. What great news! And I have genetically high cholesterol and I'm expecting to see a drop in it next time I go to the doctor.
