hey Asian Cookers, help out Ms Hollandaise here could ya please?
I'm looking at this recipe for tonight and have almost everything but "rice noodles" and rice vinegar. I'm wondering if Ramen noodles will do the same thing? and the rice vinegar is another one I'd like to sub, I have white vinegar, balsamic vinegar and red wine vinegar. Suggestions? or do I need to go to the Asian market while I'm out and about today?


INGREDIENTS:

* 2 tablespoons brown sugar
* 2 teaspoons soy sauce
* 1 tablespoon sesame oil (optional)
* 1/4 cup vegetable oil
* 3 tablespoons rice vinegar
* 1 (8 ounce) package dried rice noodles
* 1 head iceberg lettuce - rinsed, dried, and chopped
* 4 boneless chicken breast halves, cooked and shredded
* 3 green onions, chopped
* 1 tablespoon sesame seeds, toasted

DIRECTIONS:

1. Prepare the dressing 30 minutes ahead of time by combining the brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar in a salad dressing carafe.
2. To prepare the Chinese rice noodles, heat a skillet with a few tablespoons of oil and break off a little bit of the noodles and add them to the skillet and fry them. They will puff up in the skillet, so only add a few at a time. As they begin to puff up, remove and drain them on paper towels. Be sure to cook long enough as the under cooked noodles will be like eating needles. Once cooked, add them to the salad mixture.
3. In a large bowl combine the iceberg lettuce, cooked and shredded chicken, green onions and toasted sesame seeds. Let chill about 10 minutes, and just before serving add the cooked rice noodles. Serve in salad bowls and offer the dressing in a pourable container so your family can add as much dressing as they want. You can also pour the dressing over the top of the salad, toss, and serve immediately.

1. I make a variation of this.
There are tons of these recipes around. Some uber complicated, some easier. I love them all.


Yes, you need rice vinegar & the rice noodles. The rice noodles puff up & have a completely different texture than top ramen.

Both are easy to find in any decent sized supermarket. By that I mean Safeway, Albertsons, PigglyWiggly, etc.

Hope it turns out yummy!

3. I love Asian markets.
Actually, I love all ethnic markets. The kids are coming over this weekend & tomorrow I'm going to this fabulous Italian market to get the stuff to make lasagna. I'm sure lots of other stuff will just jump into my basket. :evilgrin: I'll charge it & let DH pay. :evilgrin:

8. I just got back, put the frozen Costco chicken breast to marinade
in Yoshida Sauce, soy sauce, a bit of Seseame Oil and some Pepper Sauce stuff from Costco.

Can you tell me the name of the market for when I venture to 'the big city'? I find no Asian market in Prescott.

6. Asiana Market at 43rd Ave and Union Hills. from I-17 take Union Hills
exit, go right (west) to the NW corner of UH and 43rd Ave. If you are coming in on Hwy 60, take a left on Bell Road (east) go to 43rd Ave and take a left (north) 1 mile to Union Hills

It's a great market! I just got baby white radishes for $0.69 a bunch! :bounce:

Having just moved form a lifetime in the San Francisco Bay area, the two things that are hard to adjust to are lack of great Asian foods and San Francisco style SOUR DOUGH!

Gonna have to plan a visit to 'the big city'... collect places to go shoppin'!

5. Good, because there's no substitute for rice vinegar
although balsamic can be used to make a tolerable dish.

Look for the black soy vinegar, too. That stuff is pure magic, good in all sorts of dipping sauces and pasta dishes.
