I love cod and don't have it often. But tonight we are.
Fried up a slice of bacon and a couple of onions in olive oil. Black pepper and ground cloves to taste plus a bay leaf
Washed the cod under cold water and dried the filets in paper towels Removed the onions from the skillet, in goes the plain cod add the onions back to smother the fish when when the cod almost done.
Serving it with cole slaw and macaroni salad. I'd rather a green salad and mashed potatoes but I'm using up what we have in the fridge.
I haven't felt like cooking at all this political week. Nice to be back in the kitchen coking instead of scrounging for the microwave goodies.

Seriously ..... do you not eat cod much because of availability? Costco carries nice frozen cod. While we can get it fresh here pretty regularly, we keep some frozen for those nights where we don't know what we want and do 'freezer shopping'.

you have a really good eye.
we don't get the nice cod filets very often these days. just those little frozen chunks from china. these were lovely. i should go back and try to get some more. they were frozen and i could hurry home and put them in the freezer.
i meant to rejoin costco but decided against it. when i shopped there, i couldn't get out of the store without dropping a fortune. i'm series!!1!

I marinated a frozen swordfish steak in Newman's Italian dressing and grilled on the stovetop grill, got the grill marks nicely crosshatched, ate it with a baked tater and some mixed veg. The fish I only seasoned with a little pepper as it was frozen while exquisitely fresh and didn't need strong seasoning to kill the overly fishy taste.
I love Costco.

New Bedford, MA - so we would literally get it right off the boats at the pier. Fresh haddock is a little sweeter than cod, but performs pretty much the same way in cooking. I remember an outstanding "Fish & Chip" restaurant called Jerry's that had absolutely the best fresh fried cod anywhere. They'd also get it right off the pier every day and would sell a portion that could easily feed 2 hungry people for something like $5. Sadly, they closed a few years ago. Really miss Jerry's! :(
Even here it CT, you just can't get fish that fresh. I go back to visit relatives with a major motivation being a stop at one of the local fish markets that has their own boats. Such a treat!
