Broiled Tilapia Parmesan

Broiled Tilapia Parmesan
INGREDIENTS:
1/4 cup Parmesan cheese
2 tablespoons butter, softened
1 tablespoon and 1-1/2
teaspoons mayonnaise
1 tablespoon fresh lemon juice
1/8 teaspoon dried basil
1/8 teaspoon ground black
pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
1 pound tilapia fillets

DIRECTIONS:
1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.


I'm going to try this tonight, but the reviewers suggested to add breadcrumbs to the cheese mixture to give it more 'body' and to keep it from sliding off the fish. Another review noted that on very thin fillets to not do the second broil prior to adding the topping. several other reviewers suggested some Old Bay seasoning on the fish prior to broiling which I also plan to do.

I'm thinking rice and some steamed veggies on the side.

It was quite tangy and browned up beautifully

Mr. Ketchup is the fish fan around here and he raved about it. It's surprisingly rich for a fish dish so you don't need quite as much fish as you might think per person.

5. Sounds delicious
I was just reading about Arizona tilapia farmers raising fantastic fish in their irrigation ditches, I would love to try some truly fresh tilapia. In the same articles I read you don't want to bargain shop tilapia as the Chinese import cheap fish raised in less than savory conditions.

6. the recipe would work for any fish filet actually
and do add the breadcrumbs to the cheese mix, it really gives it a nice crunch

I got a good deal on tilapia a few weeks back,
and have about five pounds in my freezer that
I've been looking for different ways to use.

I'll definitely be trying this one!

8. I used about the same amount of breadcrumbs as cheese
you can eyeball it in. just remember you need it wet enough to spread on the fish with out tearing it and dry enough to stick on and not slide off

it's a keeper for sure!
