Success! My trial run on Sunday produced results beyond my expectations. I will be posting pics tonight as it was so good Mrsazemisery said he wanted it again tonight. I came up with a process that mimics what they do at pizza parlors but on a home kitchen scale. Tune in later for the end result.

That is what I miss most about pizza from Ohio, where I grew up. A nice thin crust that's crisp on the outside but still has a tender bite on the inside. Not big thick crust or the cracker style thin crust you get in St. Louis. That and the use of more provolone, less mozzarella.
