The good news is that we bean eaters generally acclimate and our nether regions erupt less frequently as time goes on.

Nothing but sweet dreams all night long.
I used the 15 bean soup package and threw out the "ham flavoring" packet. Put 'em in the crockpot with six cups of water, added a couple more later, and set the crockpot for six hours.
Later added some freshly chopped garlic greens, salt, pepper, bay leaves, chives, cumin, chili powder, cinnamon, molasses, a few good splashes of balsamic vinegar and just a pinch of brown sugar.
They were really very good served with turnip greens sauteed in olive oil, more of the garlic greens, salt, pepper, balsamic vinegar, and a pinch of sugar. Homemade honey cornbread rounded out the meal.
Can't wait for leftovers tonight! That is such a huge change. I have never liked beans except for refried, green, and with chili. Anytime my husband wanted a pot of beans, he had to fix them himself. Or I would make them for him on the rare occasion but never eat them.

You know, the kind with heavy cream and whole sweet corn, cooked in an iron skillet.
There is no heaven in this world like beans and good corn bread.

feeling a bit depressed today but just reading your suggestion on the good cornbread and beans made me smile...seems an odd little thing to bring a smile to me amid the things that are depressing me, but there it is. :shrug: :)
I need to get me (don't have time to make it) some cornbread and beans today.

but could just never get myself to a place where I could really enjoy them, ya know? This past year or so of moving towards much healthier eating certainly has helped get me there. :hi:

I chop up onions and garlic and put them in some olive oil in a heavy iron pot and saute for 5 minutes. Then I add about 4 Cups of pinto beans that had soaked the night before. I add water and chicken broth until it covers the beans, toss in a few herbs (mainly just salt/pepper and possibly a poblano or other pepper to add a little heat). I bring it to a boil and place a tight lid on it. About an hour into the 2 1/2 hr. cooking time (on low simmer) I add a chopped carrot or two, and replace the lid for the remaining time. They come out naturally sweet and SO good.
Texas Sushi -
I like to mash some of the cooked beans up and place them in a tortilla with cheese and fresh sprigs of cilantro and long slender slices of green onions, roll it up, heat it in the microwave for a minute or two and then slice it into 3/4 inch wide coins and serve like they were sushi California rolls.
