trying to emulate my deceased Mom's delicious southern side-dish. It came out pretty good, but the texture and taste were slightly different than Mom's.
I put about 2 cups of coarse cornmeal/polenta in a bowl and added boiling water until the consistency was what I remembered Mom's to be. Added salt and 2 eggs. Heated my cast-iron frying pan with oil and dropped tablespoons of the cornmeal into the hot fat - turning once until done and then draining on paper towels.
They fried great in my newly seasoned (thanks for the tips here in this Group! :bounce:) pan, looked perfect when they were done.
Do any of you ever make this dish?
I'd be pleased to see any of your recipes and tips. I am not sure if Mom used eggs in hers....

Cornmeal mush and other cooked grains form the basis for all sorts of entrees.
I throw in red peppers, onions, mushrooms and spices for savory cakes and serve them with flavored sour cream, either soy or dairy, depending on whether or not I can afford the soy.

Kinda like makeshift vegetarian croquettes or patties.
