Our house is small, with two bedrooms, a dining room, and an "Arizona room" added in the back, along with the usual living room, kitchen, laundry/pantry, etc. The rooms are small-- it's a retirement home, all on one level. My wife and I sleep in the smaller bedroom, I use the master bedroom for an office, lab, and studio. She has her office in the AZ room and my workbench is in there too, along with her puzzle table and my drawing table. It has lots of windows and we often eat dinner in there too. We use the dining room as an ancillary work room because it already has a nice big table to stack things on.

At our age, stuff is only important if it helps us do things we enjoy. If a room or furniture gets little use we convert it for something else! I can honestly say we use every room in our house, everyday.
