Minestrone Recipe -- Cheap And YUMMY! |

I made some vegan minestrone soup, here's the recipe if you're so inclined...
First you sautee 2 FINELY CHOPPED ONIONS, HALF CUP CHOPPED CELERY and 3 CLOVES OF GARLIC in some OLIVE OIL.
Put 10 CUPS OF WATER OR VEGGIE STOCK in the pot, bring to a boil.
After the pot boils add 3 - 4 CUPS OF CHOPPED VEGGIES (I used carrots, potatoes, cabbage and zucchini but almost anything you have around will do!)
After 20 minutes add 1 CAN OF DICED ITALIAN TOMATOES WITH JUICE, ONE CUP OF ANY SHORT PASTA, AND ONE CAN EACH OF KIDNEY & GARBANZO BEANS, 1/2 CUP OF CHOPPED ITALIAN PARSLEY, AND ONE CUP OF SPINACH. Simmer for 10 more minutes. Hold the E-Coli on the spinach,natch, LOL. Salt to taste and voila!
I like to put a spoon of pesto in the bottom of the bowl first & parmesan cheese on top, but my vegan dad likes it fine just with black hot sauce & black pepper. Bon appetit DUers!

I just bought some frozen spinach yesterday. I miss my spinach. :(

I will have to add this to my recipe collection. Sounds filling and nutritious. Does it keep well in the refrigerator?
