So my husband got a job after three years of vacation. Lucky him, huh? ;) One of the guys in his department eats those hot pocket things, so hubby asked if I could whip up something similar -- only better, of course!
So, I made a scrumptious tofu scramble. Then I whipped up a biscuit dough & rolled it out about 1/2 as thin as I would biscuits. I cut out nice sized rounds of the dough, about 6" in diameter. I put about a 1/3 of a cup of the scramble in the center of the dough, folded it over, pinched the sides, & pricked the top with a fork. I baked at 450° for about 15-18 minutes. They are fantastic!
I'm always amazed when people ask me, "What do vegans eat?" I eat more varitey than most of my friends do.

And wow, those tofu pockets sound really good! I've been craving some kind of tofu breakfast/brunch thing lately. We were going to do a Tofu Florentine over home fries tomorrow but now I'm thinking biscuits. (I wonder why? :D) Mmmm, biscuit dough... :9
