OK OMG I'm not even a vegetarian (my teenage daughter is) but hear me testify veggie peeps: these were soooooo good!
If you don't live in an area with a big Mexican community I don't know if they will sell prepared sopes (SO-pays) at the store, if not you can wrap this in a tortilla and it would still be good. I get the "Cacique" brand at the smart & final fridge case, they are like little corncakes and yes they are vegan.
This starts with Soyrizo brand soy sausage. This is a product which looks very, VERY gross coming out of the "casing" but no worries -- it fries up quick and yummy, I promise!
So you fry up some of that and then ad a can of S&W caribbean style black beans (Trader Joe's Cuban Beans, just as good!)
That's it! Fry up (or bake) the sopes or tortilla, put the K8-EEE KonKoction in it, add hot sauce, a little finely shredded cabbage and guacamole, and then just be glad to be alive! So good! OK, I'll admit I was ravenous when I made them (hiking) however, REALLY IT WAS GOOD!

Your recipe sounds very yummy - we'll have to give it a try. We just used soyrizo when were reheating leftover Baja Grilled Tempeh tacos and realized we'd run out of tempeh. A little switcheroo and voila, the soyrizo was a perfect substitute. Frankly, I can just eat the stuff right out of the pan. :9
