Beans . . . the cooking of . . . |

I usually make either black beans or white beans -- 50-55 mins simmer -- and throw them over a pasta ---
or -- red beans and white beans --- in ONE pot -- with some oiland apple cider vinegar over them and a little lemon and use them over a salad --
I used to fill in by buying black beans at Whole Foods --- but now $7.99 a pound at salad bar and not always available or fresh--!
And just had the same trouble at Kings where their mixed beans weren't fresh --- !!
So . .. I'm going to have to cook beans myself more regularly ---
Someone said if you soak them overnight you might only have to cook them a very short time ?? 18 minutes --- ???
Hopefully that "cook" I was communicating with in GD will show up to give a full report --- !!!

I soak them overnight first though. Or you can cover them in water and bring to a boil, take them off the heat, cover and let sit for one hour, drain and fill with fresh water before cooking them again.
Lentils and split peas do not need soaking time and they cook fairly quickly.
I like to cook dried beans in the crock pot because then you don't have to worry about whether they are boiling over, or boiling out :-).

I soak beans overnight and cook them in a pressure cooker for about 15-20 minutes. Never used a crock pot, so I can't comment on that.
