Polenta & Vegan Ricotta casserole
This recipe takes some time to make, but it's worth it! It's very filling & quite tasty.

Make one batch of polenta. Pour it into a lightly greased 9"x13" pan & let it set overnight.

Make one batch of vegan ricotta. I use 1 block of tofu, crumbled finely & I add one batch of my vegan pesto. Mix well. Spread over the set polenta.

Make another batch of polenta. Pour it on top of the vegan ricotta & carefully spread it to cover the ricotta. Bake in the oven at 350 degrees for about 35-40 minutes, or until the top of the polenta is lightly browned.

My husband liked the casserole plain, but I topped my casserole with sauteed mushrooms, fire roasted tomatoes & vegan parm. A small slice of this really fills you up!
