Hi All,
I was pointed here from GD, where I posted about my (newly) vegan son. My husband and daughter are vegetarian, but he's decided to be vegan. He's such a cool kid, and we support him 100%. He's never eaten meat; when people ask me about it I tell them that for him eating any meat would be like eating the family dog.
This seems like a great resource on DU. Glad to have found it!

I was talking to him about how beans and rice make a good satisfying meal, and so he came up with this:
Sauteed garlic and onion in olive oil, then added chopped bell peppers and black beans, with some seasoning. Served over rice. Simple and yummy!
