I think that instead of the water, I'd melt a bit of Earth Balance to take it's place. I'll be trying this one out in the near future.

It was decent, but IMO blending the tofu and all was a pain and the results weren't worth it. IMO this is the best vegan mac and cheese going, but the ingredients are expensive. http://vegandinners.blogspot.com/2008/06/holy-trinity-mac.html
