In the early 80s, I severed a thumb in an accident. It was reattached, my right arm had to be in a sling that kept the thumb higher than my heart for a month. Obviously, I couldn't fly but I had office work to to. They set up an electric typewriter (remember those?) to the left of my chair, and I used it for all my written communications.
I got pretty good at it by the end of the month, but like any unused skill, it faded quickly when I didn't need it any more.

how she worked with that situation. She was an architect and an artist. She did her mechanical drawing with her right hand, but her painting with her left. If she did a self portrait with her right hand, it was very precise, very cold, but with her left a self portrait was less formal and more approachable.
Years ago, a site did a poll similar to mine. 24% of Mac users were left handed. I wanted to see if that still holds true. I might do this poll over at the Lounge or GD.

because that's the hand I eat, write, and hold my drinks with--you know, the life-sustaining stuff. But everything else I do right-handed, including throw and play guitar.

I'm left handed, but I have to use my right for my mouse. When I eat with my hands, I use my right.
Left handed people have adapted to a right handed world, so they may have a bit more control of their off hand.
