Just wanted to brag a bit because I'm proud of myself and there are few places that would understand the feat of skill I feel I just accomplished!

Trivia note: It was for nigiri sushi, and it was delicious with a bowl of miso soup, some pickled daikon and pickled ginger. :9

...but I really wasn't sure I'd be able to slice the fish that way after I saw the slab I got from the fishmonger. I almost just cut it into strips and rolled it all up in maki rolls.
I had to spend 5 minutes re-sharpening my knife, and another minute just staring at it getting psyched up before I decided I would try it. So for me, it felt like an accomplishment. :)
Now, if I was able to butterfly a 1/8" thick sheet successfully, I'd probably post it on my facebook wall. lol.
