--------NEW WEEK! June 6th to June 12th ----WHAT's COOKIN'? ---------------
Swim meet means hamburgers one night. I think I'm making a turkey breast tonight with chunky smashed potatoes and green beans.

I need to plan for the rest of the week!

Let's hear it, cookers and bakers....what are you eating?

1. Tonight it's Jalapeno Lime Chicken
Monday = Meatloaf
Tuesday probably leftover Chicken from Sunday. I'll slice it up and mash up some avocado, serve with refried beans, flour tortillas and all the fixings ..

the rest of the week? not sure yet

2. Tonight - Braised Chicken Thighs with oranges and olives, and a salad with fruit.
I am feeling the need for fruit and just got a supply after having run out several days ago.

And maybe, if my husband is really good today, some brownies for dessert.

3. Some kind person gave me two lobster tails
About 12-oz each.
I went and got a couple of 100% natural beef ribeyes from Sprouts.

So dinner tomorrow(Mon.) will be surf and turf with fresh baked sourdough bread and a spinach salad with blue cheese dressing on the side.

Tuesday will probably be leftover from Monday.

Tonight will be hot wings and homestyle potato salad-I'm too hot and tired to cook today.

Wednesday I'll probably make my spicy fried noodles with veggies. That will get me through Fri.

Saturday is eat out day.

4. Fish cakes and pickles...lol
I started trying a couple of new dishes. Satsuma-age, which is like a Japanese crab cake made with fish and vegetables, and I started a Pickled Turnip Chrysanthemum yesterday that was done today.

On the side, I made simmered tofu sticks with a sweet red miso sauce, miso soup with shiitake, tofu and green onion, rice garnished with a dab of umeboshi plum puree, and a couple of slices of shime saba (pickled mackerel) out of my freezer.

It turned out pretty well. I think I'm going to add more sugar the next time I pickle a turnip. It was as tart as the shime saba. Having both was a little overkill on the sour stuff.

5. Tonight was the
beef short ribs. We didn't get them out to the grill but I trimmed the excess fat and took out the bones when they came out of the crockpot, then put them in a glass casserole with homemade bbq sauce (which included some of my homemade blackberry preserves) and baked covered for about an hour and a half. They were tender and delicious.

Made a jasmine rice salad with fresh spinach, mango, pineapple, cranberries, green onion, orange juice, lime juice, nutmeg, a little salt, and sliced almonds. It was all very good.

Will probably have that for the next night or two til it's all gone. :hi:

6. BBQ Ribs and cabbage slaw

for Sunday evening... that was yummy.

Lunch was sauted garlic, white beans, and spinach over spinach pasta - also quite good.


Breakfast was the banana bread, from my newest cookbook "Crust and Crumb", I thought I'd try.
I think I prefer my grandma's recipe, she mashed the bananas and mixed in a little whiskey.;)

Roasted pumpkin soup. Whole pumpkin, sweet potato, hot and mild peppers, celery, onion, whole garlic cloves, tomatoes, black pepper, slow roasted for several hours with olive oil then blended with a little stock.

-soup cooked in the oven!

It really is very labour un-intensive. All the veggies are very roughly chopped - you blend them anyway. I cook it on about 120C for around 3 hours, or cover it with foil to cook more quickly.

8. I got a Vitamix today so I know I'll be doing some Hummus and lots of Smoothies
I'm gearing up to transition back towards a less animal centered diet. My hope is that by August I'll be off the meat and most dairy. I was a veg for years so this is a comfortable way for me to eat....So I'm cleaning out the freezer and the pantry this month. I know I'll be using up some chicken breasts that are in the bottom of the freezer. I'll probably just use some to make some chicken fingers. The outer shelves of the fridge are getting pretty full of sauces and marinades so I need to use up some of that Mai Ploy, and Ponzu that are looking kinda old.

9. halibut fillet for Sunday supper
....just sauteed with brown butter, dill and lemon. Served with couscous made with pine nuts and herbs, and lots of fresh spinach wilted with curry powder and butter. I wish the halibut weren't such a rare treat, but it's so expensive!

10. Temperatures are in the high 90s here in the high desert
so my stove is sitting neglected while I live on salads and yogurt.

Dannon's new Greek yogurt is quite good, by the way. The texture is quite different from their other stuff and it's a lot tangier.

13. I purchased Greek yogurt twice last Saturday...
once when I thought I was getting what I needed for a cucumber dill sauce and again when I realized I had purchased Black Cherry with Port Wine instead of PLAIN. I must need glasses!

17. Wednesday, June 9th - Osso Bucco
Cool weather and the expected torrential rains inspired me to brown off the veal shanks and cook them long and slow in a winey tomato sauce. I'll serve it with yellow rice tarted up with Parmesan but it won't be the authentic risotto Milanese that is my favorite with osso bucco. Purple Boston lettuce salad with olives, onion, and artichokes lashed with a good basalmic vinegar and evoo. Crusty French roll to round out the menu. Pear and goat cheese drizzled with ginger syrup for dessert. :hi:

22. Curried summer squash with leeks, steamed broccoli, and
roasted potatoes. Any meal with summer squash is my favorite. I'll be happy when my plantings start producing.

24. I tend to run out of ways to cook it...
every summer my father-in-law sends it by the bucket. I always look for ways to use it up. My family is pretty good about eating it although they tend to not enjoy squash casseroles much.

27. Grilled is one of our favorite ways. Also, stuffed with rice or
other grain, or use a recipe for stuffed peppers. I make pickled squash (bread & butter pickle recipe with squash instead of cucumbers) and relish But curried with leeks is my favorite. Just dice thinly and saute with leeks in a little olive oil, add garam marsala or curry powder and cumin, salt, pepper.

30. Friday, the farmer's market comes to town.
Today the fingerling potatoes were too cute to pass by. We had them roasted in olive oil with onion, garlic, and carrot. Tilapia filet in lemon-garlic-dill sauce. The bunches of dill at the market would fill a centerpiece flower vase, so I made a tartar sauce that was much heavier on the herbs than on the, capers, onion, parsley, lemon rind & juice. French rolls and marinated sweet/sour cucumbers rounded out the meal. I also made one layer of a yellow cake and we will have strawberries and strawberry sryup with it later.

31. Seafood salad
Lump crab meat was on sale this week and I had some shrimp in the freezer that I needed to use very soon. For tonight's supper we had a salad of crab, shrimp, iceberg, romaine, chopped Roma tomatoes, hard boiled eggs, onion and black olives with EVOO and red wine vinegar dressing.
