i expedite on weds so i didn't post the specials
tonight we had
sauteed rainbow trout fillet with a pink peppercorn compound butter served with asparagus and chive mashed potato
and fire grilled cobia with a Mediterranean vinaigrette of artichoke heart,pepperocini and sun dried tomato with feta cheese multi grain rice pilaf steamed broccoli and sauteed yellow squash
all with choice of soup all with choice of salad

tell me how you prepare. Trout in Az is quite popular. You use rainbow or brown trout? I went fishing a while ago and caught a 17 in brown trout - it was delicious, taste is a little different from the rainbow.

light flour dredge and then pan fried in a blended oil with a nice trout you want to do as little as possible that covers the flavor let it speak for itself
