Cucumber & cheese on Rye, with fresh basil and red onion. |

Threw this sandwich together tonight from what I had on hand, and it came out killer.
Dark Rye bread Cucumber, sliced thin Sharp cheddar, sliced thin Red onion, sliced real thin Fresh basil, rip one good size leaf up per sandwich
Mayo, Ranch or Bleu cheese dressing. Black pepper.
Dress the bread. Layer cucumber and cheese slices for the base of the sandwich. Add some red onion. Pepper a bit and top with fresh chopped basil. Press, slice and enjoy.
The kick with this was the fresh basil and dark rye in the mix. It was mmmm.

I chop them into small bits and mix with "cream cheese" (I use the faux kind from the tofu). It's great spread with a hearty bread.
It's also nice as a little salad. I like it mixed with a touch of lime and some sesame oil but it's also wonderful with balsamic and EVOO. This is a great salad for your creative combos with the oil and vinegar. OJ and walnut oil is also a great topper for it. It's better when you let sit in the dressing for a while to meld flavors so it's a good thing for the lunch box.
