Boletas in bloom
We have had so much rain this summer the wild mushrooms are going nuts. Gathered over 20 lbs. of boleta yesterday and heading out for a bumper crop of chantrelles later today.

3. Spend all day sauting the bunch
I gentle sauté and into freezer bags. We have mushrooms from as far back as 06 that we have frozen and the older they get the better they are. However it is hard to beat the fresh ones out of the frying pan. I will also try to get some over to our local health food store to share with others.

4. We are very fortunate when a good wet year comes our way
We have an abundant variety of fungi around us and we use as much as possible throughout the year.
Gonna start with a Risotto dish tomorrow.

5. That's something we miss out here in the desert
unless you count the Navajo company growing fresh shiitakes on their abundant supplies of sheep shite (they're good, too).

I'm eating a poor man's chicken paprika loaded with plenty of button mushrooms right now, something must be in the air all over the place because I've been craving mushies.

6. That is amazing!!!! We only get local morels here, I'm too
timid to try to pick the others!!

Also, not to snoop in your photo, but I see you also have the thumb activated pepper grinder. I love mine for one handed operation when cooking. How 'bout you?

8. Morels are very rare here
I think what you see as a pepper mill is actually a salt mill. Love it.

9. I'm thinking of getting a second one for salt.
Great for 'one hand stirring, the other seasoning' and not damp mitts in the salt bowl!

7. What a fabulous bounty!
As kids we'd go morel picking and as and adult I'd can them. Now, they are nowhere to be found. ;-(
