Had this great, simple dessert after big turkey meal today -

After the big meal, these were a great finish.

Parfait of lemon meringue / whipped cream / raspberries topped with mint, "scooped" up with thin chocolate/almond biscotti. Fairly light, sweet/tart, and just enough. Beautiful in individual champagne glasses w/ the biscotti set upright in the parfait.
