Anyone have a good pesto dip recipe? |
|
Was at a party yesterday and there was a very light and delicious pesto dip served with veggies. It was a dark green so it looked like spinach dip but it wasn't heavy at all. I asked around but the person who brought it must have gone home already. I've googled but there seem to be so many, some cream cheese based, some sour cream based, some both!
Anyone have one they love?

2. Pesto is easily incorportated into a dip |
|
Just mix it with sour cream or creme fraiche. You also could experiment with a half mayo/half sour cream mixture to see if that is more to your liking.
My favorite pesto incarnation is to mix it with soft cream cheese and butter for a lovely spread. It's terrific on bread or mixed with pasta.

5. I'll end up making several... |
|
I think I'm going to try the mayo/sour cream version. And since I have a lot to cream cheese right now, I'll try it too.
Why didn't someone figure out who brought the darn pesto dip to the party?!!!!
:)
Experimenting is fun.

3. I used to use soft tofu with my pesto dish |
|
I could see this used as a dip. It had a light creamy texture and is delicious. I also made my pesto with spinach, basil, and other leafy greens, and I would cook just for a few minutes to enhance the flavors.
Good Luck, and let us know if you find a good recipe.

6. Everyone thought it was spinach... |
|
and it's possible there was spinach in it but I'm leaning toward not much if there was. There wasn't anything chewy about it.
I'll try a few things. :hi:
