bacon calzones
I just mixed up dough for tomorrow, whole grain (stone ground by hand just a few minutes ago), with herbs from the garden, flax seeds, molasses, and random other things. I'm hoping the dough will rise enough, it's pretty heavy right now.

Tomorrow I'm getting bacon ends. Out of curiosity, what do people prefer in them (with bacon, I mean)? Fresh mozarella or the regular not-so-good kind that isn't so messy to eat? hot pepper rings? pickled mushrooms, regular mushrooms? Tomato sauce, pesto sauce? Spinach? Olives? I'm making a couple as a thank you for my butcher. Well, not so much a thank you as he ordered me to bring him a slice of the pizza I make with it and when I started laughing he was very stern and said to make sure it was still hot.

I figure calzones travel better than a slice of pizza.

Also, on a side note: everyone should admire this awesome eggplant I bought for 99 cents because it was in the freak bin. It was like a small pumpkin, I couldn't fit my hands around it in either direction, and I measured the circumference - 27 inches. I made it into two pans of eggplant parm last night, it was amazing (not old and tough tasting):

1. My combo might be too weird for many.
Bacon, onions, pineapple tidbits, Parmesan, feta, and mozzarella, sweet red peppers, tomato based sauce with a lot of oregano and a bit of sugar for sweetness in it.

5. Sounds good to me except for
the sugar and oregano. I have a hard time liking oregano, and prefer basil. But otherwise, I'm with you, D. :hi:

8. well, not a lot of sugar.
I make a lot of my own sauces for pizza, spaghetti, and usually put like a teaspoon of sugar in a pint. A little bit helps to balance the acidity and bring out the flavors, IMO.

and some fresh mushrooms, onions, sliced Greek olives, a little sprinkling of basil, a decent sprinkling of crushed fennel seed and marinated artichoke hearts. :9

Awesome looking eggplant. Not sure I would have bought it but I guess now I'll have to rethink that since it came out so good.

9. Oh heck
I went and got most of that stuff because it sounded great. Then I went to pick up the bacon - and figured I may as well ask while I'm there. The butchers only like meat (go figure!) - bacon, pepperoni, their own sausage.

Ah well, they are almost done baking and out the door, and tonight I will be enjoying the hell out of mushroom, bacon, sausage, artichoke, olive pesto calzones from the rest of the dough. :)

6. About that eggplant(s) . . . . . . .
. . . . . there was a Civil Defense manual way back when that showed the affects of strontium 90 on plant and animal life. Mutations abounded. Of particular interest were the eggplants that saw several buds develop into one giant eggplant. Supposedly, eating them caused great distress . . . for those in the company of the person eating them.

Most of the eggplants were said to look like this specimen:






















Just kidding! :)
