I have done a little experimenting with olive in in my baking but never with brownies. Food for thought! I almost always do my brownies with butter because Bill buys canola and I despise it...I think I may try the olive oil - we have been having brownie bake off wars in the neighborhood and it might just be a new secret weapon. LOL

Coconut oil makes good brownies too.

2. I had a brother who used olive oil in brownies one time
they were awful! It's something I can't imagine (but then, I have old fashioned tastes, anyway :-) )

I's with you - I don't care for the taste of canola oil either, and anyway, think butter is the only way to go for baking. For cooking, I use safflower oil - one called Saffola, and have been pretty happy with that over the recent years.

3. It took me several years before I found an olive oil that I really like
I wouldn't have even considered it before I found this olive oil, and its a store brand! It's really light and fruity.

4. I must say I wouldn't have even CONSIDERED O'oil, or ANYTHING
other than butter, for baking, until I saw this!

Bill won't eat it at all. I cannot for the life of me understand anyone not loving coconut! :9
