I do a chicken soup that is better than Mother Campbell's, but I've never been able to duplicate the stock they use for pho at the combination restaurant and car inspection station down the street. I have a feeling they start with a vat and add every bone they can get from every butcher in town and build it from there.
I find Chinese cooking to be a little more accessible than Vietnamese or Thai. YMMV.
