2. I'm making chicken enchiladas with Mexican street corn
but if it were that hot here, I'd probably cube the chicken, strip the corn and use the dressing to make a salad: 1/2 c mayo, 1t chile powder, 1 t garlic salt, 2T chopped cilantro, 1/4c white cheese, pepper, juice of two limes. :hi:

4. Too hot to cook so I did a roast in the crockpot...
with carrots, celery and onions. For sides: INSTANT MASHED POTATOES, yes I said it!, and some black eyed peas.

I dragged out the toaster oven and made biscuits. That was all I could make myself do.

7. A trick with instant potatoes is to put in a tiny pinch of cumin per serving
(if you can taste it, you've used too much). It tends to highlight what little potato flavor those things have.

I generally used them for thickening stews.

8. Have they improved these?
Instant mashed potatoes I mean. I haven't tried them in decades. I can't imagine eating them if they're as they were then.

9. When I used to make them
I added some sour cream instead of the milk, parmesan cheese (yes, the stuff in the green can!) and garlic. Would never know they were instant. It was one of my roomies favorite PMS treats. LOL

12. Not really. These were butter and herb but...
I let them sit too long and they dried. If I'd had real potatoes they'd have gone in the pot!

5. Seafood pasta salad.

Rainbow rotini mixed with boiled peeled shrimp, a package of Louis Kemp Lobster (the imitation stuff, but decent), cooked peas, some raw diced red onion, celery, and red bell pepper, in a mayo based dressing with garlic, dill, oregano, and the whole thing dusted with some Parmesan. I also like to throw sweet cherry tomatoes like sweet 100s or sungolds plus some diced cucumber in there if I have it, but I don't right now.

And yes, it was definitely too hot for anything except a cold dish for dinner -- 96 degrees for the high at Detroit Metro Airport, 97.5 at the weather station in my town at 3:00 per WeatherUnderground.

6. I made chicken salad wraps.
When the weather forecast on Saturday night indicated an upcoming heat wave I baked some chicken breasts and hard-boiled some eggs on Sunday. Cool, tasty chicken salad was very welcomed around here today. Ham and cheese pasta salad is on the menu for tomorrow.

11. I cut some boneless, skinless chicken thighs
into nuggets last night and fried them in my usual fried chicken coating. As long as I was at it, I made enough so there would be leftovers. Bill finished them off tonight. :)
