plain unsweetened yogurt (greek if you have it, but plain is good) diced cucumber (seeds removed) a bit of finely diced garlic chopped fresh mint (or dried, but fresh is better if you have it) lemon juice dill weed or fresh dill
that is how I like it.

I strain some plain yogurt or use greek yogurt
I shred a cucumber, salt it and sit it in a colander to dry out a bit. (Let it sit about a half hour) Lots of liquid will be released and this will intensify the flavor
I combine the yogurt and the cucumber. I add salt and a bit of EVOO for flavor and richness and at least two cloves of finely chopped garlic. (sometimes more :wow:)
We like ours very garlicky.
I don't add dill or mint....Prefer it without excess herby flavor.

I don't like much garlic in it because I'm usually serving it with something very garlicky like falafel or seasoned meat -- I only use about 1/4 of one clove. And I do love dill and mint.
Now I'm getting hungry for a lunch plate from my favorite downtown food cart -- the perfect greek lamb on top of a greek salad, and with the perfect tzatziki and perfect baba ganouj. Mmm.

Is straining. Use a sieve with either clean tea towel or layer of paper. Let the yoghurt drain for a couple of hours.
Basic tsatsiki is with grated or finely chopped cucumber. Mint, garlic, chilli, lemon juice, coriander (cilantro) are all optional.
