Channel Cat

A house guest has kindly gifted us with a quantity of channel catfish.

Any inspired ideas past the obvious and delicious fry?

I'm not much help with this.

3. Go exotic

Cut into cubes, dip in tempura batter and fry.

Top with a salsa of one part mint, one part coriander (cilantro), one part finely chopped cucumber and a little lemon - fresh or preserved. Add little white vinegar and a spoonful of white sugar.

4. Treat it like any other firm white fish. Saute, bake, steam,

poach or grill it's all delicious. Sauce it with white, red or butter sauces.
