Too much Kale - soup suggestions plz

Too much Kale - soup suggestions plz
Am thinking about using sweet potatoes and curry with the obligatory garlic, onions, peppers, and shrooms that I always saute for everything and through a bunch of parsley in the broth at the end.

Most recipes I saw online had meat but I'd really rather make it veggie.

Saw some with Coconut Milk.

Is the sweet potato and curry combo thoroughly nutz?

Open to any and all suggestions.

1. Sweet potato and coconut milk are a great combination
I'd love to taste the soup you are designing in your mind. It should turn out really well. Usually when I make soup with collards or kale I combine them with beans. The last time I made the soup I combined cracked hominy, black beans, a can of Rotel tomato w/chiles with the shredded greens (plus the goodies you mention above) and it was really good. I don't think you can go wrong on your present track.

2. You can blanch and freeze chopped kale, too, for use in soups later on.

3. Sounds great to me....Yummm. I'm want to make kale chips
Just cut to bite size, salt & pepper, toss with OVOO and spread out on a baking sheet and bake until crispy.

4. Have you thought of making kale chips with some of it?
They're like potato chips, only they're baked, not fried. They make a great "healthy" snack, and there are a ton of recipes on the Internet.

The curried sweet potato and kale soup sounds really good, especially with the coconut milk. A suggestion: Cook and then puree the sweet potatoes, curry powder, sauteed onions & garlic, and in some vegetable broth, and then add all the sauteed veggies and the coconut milk at the end. You could add some chickpeas or other beans for added protein, too.

7. Butternut squash, Kale and coconut milk makes a heavenly soup
Or you can do it with sour cream for a rich, but not overly sweet broth.
