Solo, Bach's Partita No. 3 in E major (BWV 1006A) is a favorite of mine, because it is flippin' beautiful at top speed, and it sounds like about three guitars playing at once when your voicings are correct. Julian Bream's take on the piece is just awe-inspiring.

"sliding down" by edgar meyer, bela fleck and mike marshall from the uncommon ritual album.
it's pretty much the same melody played on different instruments. I leave an acoustic, a banjo, a keyboard, and a 3/4 standup within reaching distance. I don't know if it helps my playing but switching to different instruments on the fly is just fun.
Can't do it with dj shadow though. i'm not good enough.

"Anesthesia (Pulling Teeth)" by Cliff Burton
Though I haven't been able to play it properly for a while because I don't have a bass anymore.
More recently
"Carolan's Farewell to Music" "Lament for Owen Roe O'Neill" "Pretty Girl Milking a Cow"
from Mel Bay's Complete Celtic Fingerstyle Guitar Book
even though I can't play them for shit yet they're still very enjoyable. It's almost like learning to play all over again because they require a lot of technique I never made myself learn in my 16 years of mostly self-taught playing.

Piano:
Round Midnight - The Monk solo piano transcriptions. (I stay fairly close to the transcriptions, but change a few chords here and there. Mostly it's chords he used, but i put them in different places, just to put a twist on things.) Sunny Side of the Street - McCoy Tyner is the influence. But, my version is Cecil Taylor-ized. I've Got A Crush On You - It's A Gershwin tune, but i play a broad expansion of changes on it.
Guitar: Three pieces i wrote, i play a lot. They're instrumentals, one on acoustic (with a different tuning) and the other two are electric.
Ice 9 - Satriani
Playing along with records: I LOVE playing along to The Cars album Candy-O. Also, i'll play along to a Steve Ray DVD (although i can only do that for a few songs, before i get bored).
My styles on piano and guitar are radically different, hence the huge difference in repertoire that i like to play. The Professor
